Three Easy, Healthy & Delish Meals!


I am definitely not a cook (or a food photographer)! I keep things super simple, try to eat foods with 5 ingredients or less, lots of veggies, eggs, and drink a lot of water throughout the day.


I used to stress out about what I was going to eat later in the day, or if I would be healthy enough, etc. I was wasting way too much of my mental capacity thinking about food! I have found that planning ahead and keeping things simple is the best way to go. So stress no more! Here are three easy, yummy and nutritious recipes for you to try that will leave you feeling full and happy! :)


Side note: I am not vegan, vegetarian, gluten free, etc. and I have no food allergies. If you would like more recipes that target different food restrictions or need food alternatives, I am happy to help! Please comment below!



Breakfast: Spinach Smoothie

  • 1/2 cup frozen spinach

  • 1/2 frozen banana

  • 3 ice cubes

  • 1/2 vanilla quest shake or almond milk

  • 2 tbsp PB 2 powder

  • 1/4 c chopped walnuts






Lunch: Egg and Veggie Scramble w/ Avo Toast


Note: I spray a frying pan lightly with coconut oil spray when cooking veggies/eggs

  • one egg made your way

  • 1/2 c cooked kale

  • 1/2 c cooked spinach

  • 1/4 c quinoa

  • 1/4 c portobello mushrooms

  • sprinkle of sun-dried tomatoes

  • avo toast: 1/2 avo on one slice of multigrain toast

  • top with 1/2 lemon squeeze and Trader Joe's "Everything But the Bagel" seasoning





Dinner: Zucchini Noodles w/ Baby Shrimp and Veggies

  • 2 cups zucchini noodles

  • 1 serving baby shrimp

  • 1/2 c broccoli

  • cook on stovetop with balsamic glaze
